Sopapilla Cheesecake

Back by popular demand! Okay, only one person requested it but his wife is pregnant and I REALLY think she needs this. Also, Michelle, you're not allowed to make this for family get togethers unless I'm not making it because I'm not willing to give up my easiest dessert recipe.



Sopapilla Cheesecake

2 (8 oz) packages cream cheese
2 (8 oz) packages refrigerated crescent dinner rolls
1 cup sugar
1 teaspoon vanilla extract or almond extract
1/2 cup margarine or butter, melted
1/2 cup cinnamon sugar (combine about 1/2 cup sugar with 1 TBS cinnamon)

1) Using a 9x13 baking pan, unroll one package of refrigerated crescent rolls and line the bottom of the pan.
2) Flatten.
3) Mix together the cream cheese, sugar, and extract.
4) Spread over the crescent rolls.
5) Unroll the other can of crescent rolls and place on top of cream cheese mixture.
6) Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture.
7) Bake at 350 degrees for 30 minutes.

Yum! Thank you so much :-) Technically I'm not suppose to have these right now (due to gestational diabetes), but I may splurge just a bit!

I'm pretty sure that I made these less that 24 hours from returning from our trip to see you guys and they were a hit!! And I took them to my mom's house so no worries! BTW I laughed so loud that J came in to see what I was doing when you wrote that your house was so quiet!!!! Just yesterday we were at you parents house when "little man" was making his fussing sound, and J said, "there's the noise the (you) and (TOIAW) love!" You know you miss the chaos :-P

Hmm, maybe I'll try that for one of our family reuions this summer. Sounds delish!
